I love asam pedas. It's so appetizing. I have guests coming for dinner and it's perfect! Dishes like this is hard to cook with just 2 adults eating. Lots of work involved.<br>

I went to chat with my colleague who married a Malaccan and cooks Malacaan food quite often. She told me, Asam Pedas Melaka is spiced, and if I were to cook Merlimau style, there has to be burnt coconut, as taught to her by her mother in law. As she is not staying with her in laws, she just played with the dish, adding anything she fancies. Yeah, that's what I will do too, if I'm not blogging about heritage dishes.<br>

I was using my good old trusty buttermilk pancake recipe for years, most of the time substituting the buttermilk with natural yogurt. But my eldest have developed some ‘dislikes’ to my pancakes over the years. And she can’t explain why, but the other kids are still enjoying them as usual. Usually when it's sold not in the state itself... it always comes in blue. But if one were to eat it in Kelantan, it can come in yellow or even dark green, depending on what is used to tint the rice. It's like a salad rice, tossed together to be eaten, healthy, depending on which side dishes you take.<br>

During MCO, I prepare tea time daily, because we have early lunch. And whatever that’s left from tea, the kids will eat as supper. They are growing up now and they eat a lot :-)<br>
My kids don’t eat the same cakes. And this cake pleases my eldest, but my Second kid won’t touch it.<br>

I’m writing this post with my phone.<br>
Malaysia is currently under Movement Control Order for Covid19. Stuck at home, can’t dine out, we yearn for food that we love eating out. My kids have Tosei once every fortnight and they love it.<br>

So I plucked up my courage and tried making this at home.<br>
Many recipes online require raw rice , like idli rice. It’s not something I can get easily in Malaysia and most recipes don’t provide exact water amount. Vague instructions like ‘just enough’, ‘not too thick not too thin’ doesn’t help the noob like me who has never ever seen it made from scratch. Eyeballing takes experience, like real life experience seeing and feeling the batter.<br>

I messaged one of my readers , Thenmathy on Facebook, and she guided me from purchasing to fermenting... I’m grateful for her help.<br>

I'm sorry that I've been away for more than a year.<br>
Last year, I thought I wanted to be blogging again, but some health issues came up.<br>
<br>
After I blogged about the <a href="https://wendyinkk.blogspot.com/2018/11/chocolate-ombre-butter-cake-with-video.html" target="_blank">Chocolate Ombre Cake</a>, I went to Vietnam with my friend for few days. It was a tiring trip and I had trouble sleeping. And when I came back, there was more travelling with the kids, my body ended up exhausted. Two days after reaching home (finally), I fetched my mom for her medical appointment, and as I was driving home, the pain came.... simply put it as, my fourth time going into active labour. Yes, it was that type of pain, as if I was labour induced. Stopped my car beside the road and called my brother, who was the nearest one to me at that moment. I couldn't breathe whenever the pain came, you know, like when the strongest contractions come?<br>
I was rushed to the hospital. I lost my ability to stand for the next few days because my spine flared up very badly. A month later, I flared up again. Anyway, cut the story short, it took me two hospitalizations to finally got diagnosed as having Spinal Osteoathritis. Couldn't stand for long, couldn't carry my handbag anymore, couldn't walk for long, .... took me one year of resting to be actively back in the kitchen. I started cooking again a month after my second hospitalization. But it was all simple meals, that I needed a few rests in between.<br>
<br>
I thank God that I could stand and walk again, and it's a blessing to be able to do that. Actually it's not really a big issue, but when I was bed ridden, I realized that being able to stand each day, is really a blessing, His grace.<br>

This cake was a random idea that popped in my head one fine day.....<br>
Some weeks later, I made it, shared it on Facebook.... and made it again for my kids' children's day in school.<br>

The layering for my latter attempt wasn't as good, maybe because I put it too low in the oven, hence, the layers curved up. So, in order for you to get a better looking cake than me, I suggest that you bake it on the middle rack instead of the lower rack.<br>

It's been a while since I wrote something on this blog.<br>

For those of you who are with me on Facebook, I am still posting my current kitchen adventures.<br>
I am also on Instagram and I'm also planning to make more videos since the internet speed at home has greatly improved.<br>

Few years back, for me to upload one 5 minute video, took me more than 1 hour! It was really a torture, making sure connection didn't break or I would have to start all over again, the waiting, the upload and the processing before the video was complete on Youtube. Now all this is history. I'm done uploading a 10 minute video in 5-10 minutes.<br>

I have been making these since I was a teen. For each Chinese New Year, my mom will order 4kg of minced pork from the butcher, get it sent to our home and I will be doing the marinating and sun drying. When mom comes back from work, she would start the charcoal grill and it's grilling time.<br>

I haven't been making these for many many years, until a blogger's gathering 7 years ago. I tried to recall the ratio and the outcome was a bit too salty, maybe I got it wrong. Then, two years back, I tried to make it again. The taste was just right, but the colour was too dark due to the addition of just 1/2 Tbsp of dark caramel sauce. This time, I made it again and it was just nice. Sweet, sticky, not too salty and the colour was what I wanted.<br>

Today marks my blog's 10 year anniversary.<br>
<br>
I started blogging after I had my first child and this year she turned 10 in August. The first recipe that I blogged about was the Moist Chocolate Cake that I bake quite often. And until this day, I've posted 1288 posts, of which should be around 1200 recipes, at least. Many of the recipes are with referred sources (usually with some personal adaptations to suit my preference) and recreated by me without any recipe to refer to, and I'm always proud of the recipes that I created by myself.<br>
<br>
Looking back.... My most active years were 2010-2013 and in 2010 I posted for mostly 6 days a week. 2011 I slowed down a bit due to my house move and a new baby. I really slowed down when I went back to work. I tried hard to upkeep my tempo, but it was hard. Even when I finally resigned and left the working world, it's hard to go back to how it was.<br>
<br>
Why did I resign from my lifelong paying job as a Government School Teacher then? Blogging earns alot, right, with all the high readershipI get....... Some people tend to think I earn a lot from blogging. If USD20 a month is a lot, please .... I'm really not earning enough to even buy the annual amount of butter I use in a year. Being a mother is difficult. Being torn between children and work, I chose to stay home and be just a mother and wife. I didn't resign to focus full time on blogging.<br>

Maybe sometimes I felt silly, that I share recipes for free, and some people, knowing that my created recipe works, just use it for commercial publication that isn't for free. This type of feeling just makes me feel demotivated. But what can I do? I feel happy when people try the recipes I shared and feedback to me. And I am happy with all the new friends I made on Facebook when reader connect to me, and that's what I should focus on.<br>

I love orange flavoured bakes. It has a wake me up effect.<br>

My kids love butter sugar buns, so I made the usual butter sugar bun into an orange sugar bun.<br>
You can use your favourite basic bun recipe and mix the sugar with some orange zest to get the same effect.<br>

My mom used to make this quite often whenever she had extra coconut milk from our weekly kaya making sessions. But since she doesn't use measurements, they always come out different. LOL.<br>
<br>
The version I made today is inspired by a popular backpacker's cafe in Tanah Rata, Cameron Highlands, called T Cafe (now renamed to Lord's Cafe). I read online (prior to my trip) that it was one of the most popular items on the menu, and so I ordered it. It arrived as one large round thin pancake, at least 10 inches big at 2-3mm thick. When I tasted it... it was a soft thin pancake that reminded me of Mom's coconut pancake but it had a nice hint of lime. Sprinkled on top was toasted coconut. That piece of thin pancake wasn't cheap and 1 slice didn't make me feel even 1/8 full.<br>

When I was teaching in Selancar, I have always wondered how come the breakfast fried rice in the canteen, sometimes taste awesome, sometimes just so so. Until one day, I fried some leftover nasi lemak with egg. My brain went “tink”, the bulb lit up. The fried rice tasted superb because it’s made with leftover nasi lemak. <br>

And today I had some extra coconut milk from making coconut agar-agar and I was busy doing the cake, so I better cook something simple for dinner. And fried nasi lemak shall be it! I purposely made the seasonings as close as possible to the accompanying sambal, except, there’s no tamarind. <br>

The non-muslim community in Kuala Kangsar will know of this snack.This is sold at a small hawker stall near the town's supermarket, only available evening onwards, made by a Hokkien lady who resides few doors away from my old residence, a family friend.. It's like those sweet potato balls, but made into fingers.<br>

We often discard corn silk, and it's treated as waste. When I was a kid, I collected corn silk whenever I saw someone peeling fresh corn and played masak-masak with it. It's like playing with hair! Absolutely fun and environmentally friendly. LOL!<br>

I saw this recipe years ago, it reminded me that I've seen corn silk sold at Cameron Highlands, and the store owner told me it's good for the kidneys. I've also read about it saying it's diuretic and good for people with water retention. According to <a href="http://www.baike.com/wiki/%E7%8E%89%E7%B1%B3%E9%A1%BB" target="_blank">Baike.com</a>, it's good for edema, hypertension, diabetes, jaundice, gallstones and it's also good for lactation purposes. Benefits of corn silk can also be found on <a href="http://www.webmd.com/vitamins-supplements/ingredientmono-140-corn%20silk.aspx?activeingredientid=140&activeingredientname=corn%20silk" target="_blank">WebMD</a>. And it could also help with fat reduction, as said in <a href="https://www.researchgate.net/publication/299547303_Anti-obesity_potential_of_corn_silks_Relationships_of_phytochemicals_and_antioxidation_anti-pre-adipocyte_proliferation_anti-adipogenesis_and_lipolysis_induction" target="_blank">this research paper.</a><br>

I got to know about this dish when I watched Masterchef US back in 2012. Christine Ha, a blind cook of Vietnamese descent served this homey dish to the judges and won their hearts. Sounded delicious!<br>

The featured recipe wasn't the full version, and I changed it based on how she said she added coconut soda and some recipes call for birds eye chilli, but other than that, I just tried to follow her method and the recipe.<br>

Few years back, baking with bamboo charcoal was popular. A lot of people were baking bread with bamboo charcoal powder, creating black loaves or zebra looking loaves. Nasi Liwet Solo is a famous coconut rice dish in Surakarta, Central Java, also known as Solo.<br>

There are two types of nasi liwet in Indonesia, one is Nasi Liwet Solo and the other is Nasi Liwet Sunda, of which is popular in Bandung.<br>

<b>Nasi Liwet Solo Komplit</b> is Nasi Liwet with all the works, namely Ingkung Ayam (Coconut Chicken Stew), Labu Siam (Chayote in Spicy Coconut Gravy), Telur Pindang (Stewed Eggs) and Areh Telur (Coconut custard). It's a very filling and rich meal, with lots of eggs and coconut.<br>

Ingkung Ayam is a chicken stew popular in Central Java. White coconuty chicken stew that has hints of aromatics but it wasn't spicy at all.<br>

The recipe I cooked wasn't as complicated as the version in Jogya, but it came together with Nasi Liwet Solo's recipe.<br>
<br>
Serve the chicken in large pieces or tear it into strips to serve in Nasi Liwet Solo.<br>

My second daughter Lyanne is a durian monster. She's a very picky girl who loves plain rice and anything carbo but hates meat and vegetables. She isn't an adventurous eater but surprisingly, she loves durian. Love is an understatement. She's mad about durians. Durians aren't available all the time and when it's durian season, she will be pestering her grandpa to get her durians and he will gladly scour the town and get her the best that he can find.<br>
