Sweet Corn Sherbet

When I was a kid, I don't think I've eaten much of those creamy creamy milky ice creams. I grew up eating sherbets, an ice cream that does not contain "cream", but milk. It's not creamy, but it's not grainy.

When I was 5, Kindergarden ends at 4.30pm. Then I'll be home by 4.40pm. Then dinner at 5 to 5.30pm. I'd be sitting at the front door, on MY small rattan chair, getting fed by Grandaunt. I'll see this ice cream lady pushing her ice cream cart everyday, passing by my house during my dinner time. And without fail, grandaunt will get me 10 sen worth of "ice cream", put into my empty drinking cup for later consumption after I finish my meal.

Brings back a lot of memories when I made this. It made me feel like a 5 year old again.
What about you?

My husband loved this, he said, it's better than those creamy creamy ice creams. Maybe it brings back childhood memories for him too. And to my surprise, my ice cream loving Lydia, didn't take a 2nd lick at this. She didn't like it. She prefers creamy ice cream, that most kids nowadays are so accustomed to.

It feels cold, yes, cold from the inside after I ate these 2 scoops after I took pictures of it. So, it's really perfect for a hot hot day.

Sweet Corn Sherbet Recipe

250ml evaporated milk
500ml water
250gm creamed corn
100gm sugar

1. Cook everything together until it comes to a boil.
2. Leave to cool. (you can just mix everything together, but I'd rather bring it a boil first)
3. Put in a freezer proof bowl and put in freezer.
4. Let it freeze until it is the outer ring is frozen, take it out and whizz with a hand held mixer to break up the ice.
5. Repeat process another hour later. (itmakes the ice crystals more friendly to the blender later)
6. When everything seems half frozen, whizz it with an immersion blender or break it up into a regular blender and whizz til fine.
7. Pack into freezable containers and keep frozen.

  1. Cool! Sorry for the pun, lol. Anyway, I have to try this some day. It seems simple enough for me. It reminds me of Yogurtland. :) Oh yea, what exactly is creamed corn? I never heard of it before. Thanks in advance Wendy.

  6. Blessed Homemaker,
You can try other flavours if your kids don't favour creamed corn, maybe add cocoa powder? It makes a nice chocolate sherbet.

    Jess,
Haha, Lydia now loves creamy, chocolatey or cheezy stuff. I find it odd that she don't like this. I'm not sure whether it's the corn or the texture, but she likes to chew on ice.

    Sparkle Memo,
It's nice to have some old fashioned stuff at times... and it's nice:)

  7. It certainly brings back memories. I used to wait for that familiar bell and would rush out with 5 cents to buy one scoop sandwiched in sweet bread.
I've never made this, don't know if I will. My grandsons don't like ice-cream at all. They don't know what they are missing.

    :0
I wish they are my kids, hahaha.

    Anncoo,
definately. Even better with the maker.
I don't have one, so I had do use the break and crush way.

    Jess kitchen,
Oh please rest, and don't think of making this.
Not for now, maybe later, ok?

    Meldylocks,
Its hard to find this type of ice cream now, plus the ones that you can find are loaded with artifical flavourings.
Ur blender will make a super smooth sherbet :)

  14. Oh Wendy, thanks for posting this! My boy loves especially this kind of ice-cream. Frankly, I grew up eating those gelato ice-tube. Remember? It cost only 10-20 cents per tube, selling at the school canteen! haha.... Actually, that lady was my neighbour. I used to help her do the packing and she'll gave me a free treat. Hope you're enjoying your day.
    Cheers, kristy

  16. I too love corn ice-cream but too bad we can't get it here. If I make this Carlos will think it is weird as to him corn is a vegetable ha ha.

  17. Looks so cute in that small polka-dot cup. Well I love creamy ice cream and I will complain if I happen to eat one that is not, lol! But sweet corn ice cream seems to be an old favorite! But here in Singapore they come in long rectangular Popsicle but the corn taste a bit fake. I guess yours will be truly authentic and real corn taste. Yum!;)

  18. DG,
I guess it's us southeast Asians that love this flavour :)

    Kitchen Corner,
True, a sherbet is less fattening than ice cream.

    Kristy,
The ice cream lady stayed at Aston Settlement, the only house beside the football field, under the big saga tree. You stayed near there?

  19. Happy Flour,
I just wish I had some of this today, it was terribly hot and humid.

    Gert,
Oh, is it? Creamed corn in can is sweet actually. Let him try a spoon of that :)

    Bee,
This is 100% authentic and no additional flavours added, unless the creamed corn from the can has flavourings added in.

  22. Wwwwooooooohhhh.... brings back memories! We must be from the same era cos I really remembered this and seeing your pics, the flavor and memories of the taste just came back. But... to remember kindergarten ends at 4:30pm, your memory is really something! Hahaa.

  23. Passionate about Baking,
Hahaha, I don't think restaurants will serve this.
This is a poor man's ice cream. Hahaha!!!

    Little Inbox,
Wah, durian sorbet sounds super!! BTW, maybe your mom would like to try Banana ice cream. Just mash the bananas and freeze and whizz in blender :)

    Angie,
    Yup, thanks

    Ronni,
There are alot of things I wish I forgot, and it seems that my memory of current events are faltering, rather then memories of bygone times.
I can't even remember my last batch of students' names, but I remember each of my kindy classmates and all my primary schoolmates. Isn't that horrible?

Oh yes, my kindy ended at 4 on fridays, and 4.30 mon-thurs. hehehe. Lots more that I can tell about kindy. Memory still fresh.

  25. No, not that lady! There's another lady before this. She moved to KL about 25 years ago!

  26. pigpigscorner,
Haha... corn ice cream stick, I did eat that, but not as often as this. I somehow prefer red bean stick :)

    Kristy,
Oh, then I do not know which lady. Maybe because these ladys are selling ice cream on foot, they don't travel all over Kampar, but only go around where they stay.
