Steamed Pork Slices with Bean Paste
Grandaunt used to make a lot of steamed dishes. Only steamed pork and she has loads and loads of recipes. This is one of them that I love to eat.
The gravy is very, very nice with rice.
Steamed Pork Slices with Bean Paste Recipe
200gm pork fillet or other soft meat (You may use chicken meat if prefered)
2 tsp hot bean paste (or substitute with 1 tsp finely chopped chilli and 1 ½ tsp regular brown bean paste)
1 tsp sugar
2 cloves garlic, finely chopped
1 tsp cornstarch
1 Tbsp water
1 Tbsp cooking oil
1. Thinly slice pork fillet.
2. Put bean paste, garlic, water and sugar onto pork and mix well.
3. Put in cornstarch and mix. Finally add in oil.
4. Let the pork marinate for at least half an hour before cooking.
5. Steam on high heat for 10-15 minutes. I prefer pork to be very well done, so I do it on 15.

this look delicious looks very much alike the steam pork ribs served in dim sum restaurants yummy!!

ReplyDeleteMy grandma will always cook steamed spare ribs this way with normal bean paste and bird's eyes chili which I loved most. Will try using hot bean paste next round and see the difference. :)

It might not taste the same, as all bean paste taste different according to different manufacturers. I used this to save work on chopping chillies.

This is actually an old fashioned dish :)
If your grandma made this, Gosh, then it's got to be really long ago.
There are a lot of yummy old fashioned dishes that are almost forgotten... we should revive them :)
oo yes, there are so many ways to steam pork and they are so tasty with rice!

ReplyDeleteThis was great. I love dishes which are steamed. Because the pork has enough fat I did 1/2 the oil and instead of using water only I did add a bit of Chinese cooking wine. I had to stop my husband (well, myself as well) from eating too much of it.

Gald you liked it. I used lean pork, so, you can definately reduce the oil if yours is fatty.
Did this dish yesterday but I didn't end up with all that sauce. Strange....

ReplyDeleteFrankly, I find once frozen pork to have more gravy when cooked compared to fresh unfrozen ones.
