Kelp Soup with Beans and Oysters
Adapted from Soups for Expelling Dampness and Heat by Chiu Sang
Indications:
High cholesterol level, high triglyceride level, fatty liver
Functions:
Promotes urination, expels phlegm, softens tumours, eases meridian congestion, cleanses the blood vessels, reduces blood fat
20gm dried kelp (kombu, I used Taiwanese)
30gm black beans
40gm soy beans
250gm lean pork, cubed
20gm dried oysters, rinsed (about 5 pieces)
2.5L water
Some spring onion for sprinkling
1. Soak both beans for 2 hours. Discard soaking water, and drain beans.
2. Soak dried kelp for 20 minutes only. Discard soaking water. Cut into smaller pieces or long strip and tied into bows.
3. Bring water to a boil. Put in everything.
4. Boil on high heat for 10 minutes, then lower down to low heat for another 2 hours.
5. Season with salt and pepper.

ReplyDeleteWill the kelp bring bitterness to the soup? Because the Japanese Dashi Stock recipe I read indicates that kelp will bring bitterness to soup if not taken out once the water reach boiling level.

Me, not a hint of bitterness. The Chinese alwas boils it for long periods of time. Maybe we don't use as much as the Japanese do. Or maybe the variety is different.

can i substitute lean pork with chicken breast?

ReplyDeleteSure, chicken breast should work fine as well.
If you want to use slow cooker, put everything into the pot and pour in boiling water. Cook on high (never use low for these soups) for at least 3 hours. Frankly, I'm not sure if the flavour will be nice when done is slow cooker, as not all soups are suitable for slow cooker, but u can try.
oops, i forgot bout the boiling water for the slow cooker *slapping my forehead...ouch*. then, how bout pressure cooker?

ReplyDeleteFor pressure cooker.... I think you just throw everything in and after boiling, reduce heat to low and cook it for 15-20 minutes. But it might be cloudier. Pressure cookers are nice to cook beans with. I don't own one, but my mom does. I use it whenever I'm at her place.

ReplyDeletegosh, this soup is so tasty. i just boiled it today in slow cooker according to yer directions. i had my first taste and nope, i don't need to add any seasoning as all ingredients itselves has lend to the umami taste.
i compare mine with your pics and yup the same. i used chicken breast and think the organic black beans kinda small in size but no sweat.
i don't have green onions so just serve it as it is. oh the taste of sea...everyone should try this.

ReplyDeleteThanks for trying this out, am glad you loved it. Soy beans sometimes come in all sizes. Don't worry abt the size.
