Berrylicious Yogurt Ice cream - Berry Week #3


This is a cleaning the fridge ice cream.

The strawberries has been in my freezer for many many months. More than 9 months, I guess. And a punnet of blueberries almost on the brink of being totally dried up by the fridge, half a lemon left from a rhubarb juice, a carton of half finished yogurt and a bit of whipping cream left in a large carton.

What better way than to use them all up in an ice cream. So I made this up.. and the outcome was really good. But weirdly, this melted faster than my Blueberry Ripple Yogurt Ice Cream, although this version contains more gelatin. The actual fact is that this version contains more cream than the former version. Maybe that’s why.. maybe.. I’m saying maybe.

I also made some into popsicles


Berrylicious Yogurt Ice Cream
Recipe source: Wendyywy

125gm blueberries
125gm strawberries, hulled
100gm sugar
2 Tbsp lemon juice
1 tsp lemon zest
1 tsp gelatin
1 Tbsp water

170gm plain yogurt
300gm whipping cream

1. Cook strawberry blueberries and sugar until the syrup turns into a nice purplish colour.
2. Turn off the heat and put in lemon zest and juice.
3. Let it cool down and blitz to a puree. Set aside.
4. Place gelatin and water into a larger bowl. Let it sit for 2 minutes.
5. Heat 1/3 of the puree until it is hot and pour into gelatin mixture. Stir until gelatin melts.
6. Mix with the rest of the puree. Combine with the yogurt.
7. In a cold bowl, whip the cream to soft peaks.
8. Pour 1/4 of the puree into the whipped cream and fold with a whisk.
9. Repeat step (8)
10. Pour in all the puree and fold.
11. Pour ice cream mixture into prepared moulds (a loaf pan or popsicle moulds)
12. Chill overnight until totally frozen.

    Did you mean how did I keep the strawberries in this post for months? I froze them.
    If you are refering to strawberries in general, it's hard to say. It depends on how it was cultivated, how ripe it was when it was picked. Imported strawberries will keep longer as they were picked much earlier and slowly ripened, but local strawberries are picked when they are riper, hence can be kept for shorter periods of time. It also depends on their post harvest treatment. If they are chilled almost immediately after picking, they can last 3 weeks in the fridge (not freezer). Once I kept Cameron Raju's strawberries in the fridge for almost a month, they were still fine. But those from Tesco could hardly last more than 1 week and they get mouldy. Some strawberries that I bought at Brinchang Night market couldn't even last til my trip downhill and got mouldy oredi by the time I reached home. So, it's really hard to say.

    You are so creative and good to use up yr bits and pieces in your fridge. I dont know why I find it so hard and such a shame for me cos I have to throw them away after a while.. :(

  8. Hey this is nice! I have to make this for my girl now. Usually I don't try out the ice-cream recipes after reading it coz mostly need an ice-cream maker, and I don't hv one. But yours here is simple and just nice for me! Thanks Wendy. After making I'll let you know ya..:)

  11. Ooo...this looks berry berry good! Especially love the popsicle ones.  btw, I too freeze my berries sometimes...straight from the store that is. So I know I have berries to bake or churn out some creamy anytime I want. :)

  12. Wendy, I am so curious what brand of fridge you have got. I can never keep fruits for that long period, it will rot away. Cooler temperature?

    I have a bottle of frozen raspberry, I think my daughter will be delighted to have them in lolly. Thanks for the idea.

    Mine is a very old brand fridge, Kelvinator. It's rather cold, but doesn't make my veggies freeze biten. The strawberries were frozen la, that's why they could last that long, the blurberries were so so wrinkled by the time I made this. They were in there for a few weeks.

    Just blitz them and make them into ice lollies. No need too much work with rock melon.

  15. haha! still cant help myself commenting on storing food in your kelvinator! but i like the way you store your things..and i think your kelvinator is really a big one. Dont know just looking at the ice cream, it seems to be stimoulating my salivary glands..haha! btw, do you know whether does tesco has these popsicle moulds?

    Hahaha, I knew you would.
    No la, my fridge is regular size only. Just that all the post has been written in all different time frames and has been disposing of different items at different times. Haha.
    I dun think tesco has popsicle moulds, but 100Yen will have for sure or try the new Jap store at De Gardens. I bought mine at Ikea.
