Ginger Egg Fried Rice - Confinement Month # 8


One of the traditional confinement dishes.

I hear, it's the standard "confinement breakfast".

My confinement lady told me, most of her clients will only eat this for breakfast, FOR ONE WHOLE MONTH!!!
I'll die, die not from the ginger's heat, but from boredom.

I only consume this once per week for lunch, not breakfast. It'll be too heavy if this is for breakfast.
Take note that only sesame oil is used here, no cooking oil. If this is for regular consumption, please use cooking oil.



Ginger Fried Rice
Recipe source: Wendyywy

1 cup of cooled cooked rice or rice servings for one
2 Tbsp very thinly julienned ginger
2 Tbsp chopped spring onions
2 Tbsp sesame oil (for non confinement, use regular cooking oil)
1 Free range egg
Salt to taste

*If you like more heat, add more ginger, adjust the ingredients' amount as you like.

1. Heat a wok on medium heat and put in ginger. Toss ginger around until it is no longer moist.
2. Turn heat to high and put in sesame oil. Fry ginger until it is fragrant.
3. Put in rice and toss until rice is hot.
4. Push rice aside and put in egg. Push rice back onto egg and toss until eggs are well scrambled with the rice.
5. Season with salt and continue to fry until rice and eggs are really fragrant.
6. Toss in chopped spring onions and dish up to serve.

  4. Totally agree with u! Bore 2 eat everyday & too filling 4 breakfast! I think I eat this dish less than 4 times in all of my 3 confinement month!

    I don't mind having this for lunch twice a week :) love the crispy ginger and the egg and the aroma of sesame oil!

    I used Taj Mahal Ponni rice for this fried rice, as it's more "separable" and fluffy

  14. Really? This is standard confinement dish? I am surpised. I thought confinement should be eating soupy things. This looks good, though. I don't mind eating this at all.

  15. few weeks ago , we had this at overseas rest in ipoh.. my brother's recommendation, it was very nice but maybe not as spicy as this one..btw, they are selling mooncakes already!

  17. My confinement lady also cooked this for me,,,sooo yummy leh, I like it very much.She chopped the ginger finely and she fried it together with kai lan.Oh!!now, I missed her dish!@#$%^

    Malaysia is not small but yet quite big. I have no idea where you are. Just head to any crockery shop, those that sell pots and pans and plastic ware. Head to PJ old town if you are around there. Lots of such shops in that area.

    Well, here it is a "standard" confinement dish. Maybe in the Cantonese community. But my confinement lady works all over Malaysia and she told me a lot of her clients eat this everyday. Even my aunt cooks this for me each time she visits me right after delivery. We drink lots of soups too, but this is usually for breakfast. I'm not sure about the practices in Singapore.
