Recipe recreated in Aug 2011
My mom used to have these when she was a kid. She recalled grandma will actually simmer them in water to make sure these are thoroughly cooked.
My mom is the type that once she cooks a dish, she repeats it at least once a week, until one day she gets sick of it and then it goes extinct. LOL.
It's been almost 20 years since I've seen her making this.
Omelette Dumplings

Egg Mixture
3 large eggs
1/3 tsp salt
Dash of pepper
Filling
100gm minced meat (can have a mixture of prawn, pork or chicken)
1 Tbsp chopped spring onion (can add some chopped carrots and waterchestnut too)
½ Tbsp cornstarch
1 Tbsp water
¼ tsp salt
1/3 tsp sugar
Dash of pepper
1. Beat eggs with salt and pepper.
2. Combine ingredients for filling. Separate filling into 10 portions, roll and slightly flatten.
3. Heat wok (wok preferred due to the curved base). Turn to low heat and put in 1 tsp of oil.
4. Put in 1 Chinese soup spoon of egg into the center of the wok. No need to spread it around, the oil will help spread the egg.
5. Put in one portion of meat and fold the omelette into half to cover the meat. Gently press the dumpling with the back of spatula.
6. Fry until both sides are golden. Don’t be tempted to use high heat. Stay low all the time.
7. Repeat step 4-6 until all fillings are used up.

I've never had this before. It is something new to me though it is easy to make. The mince meat/pork would surely cooked in it?
ReplyDeleteMy mum does the same thing your mum does. My mother fried them in bigger pieces to serve with rice or porridge. I kept her recipe in my blog too. Afraid it might really go extinct.

No simmering. If you used low heat to slowly cook it, no need to simmer. My mom uses medium heat, and quickly flip the egg, so inside is still raw.

ReplyDeleteMy mum is 75 years old and she still cook this dish. I am lucky that I still have my mum home cook food since I am married and have two grown up young adults. This is our family favourite dish. Very sedap!
ReplyDeleteThis is making me drool... my mum also used to make such omelette with french beans, chinese mushrooms and prawns as the fillings. Yum too! Although it seems easy, but when I made it, I can't get a decent half circle omelette probably cos I'm too greedy with the ingredients, hence everything spills out hence i can't seal the egg properly. :P

I had some fish paste and minced chicken left over and decided to try this recipe o your this evening.
I added diced carrots and some chopped vege aka cai con. And it was nice with a surprise inside for my kid. I used a frying pan instead of a wok and indeed as you had mentioned above, wok is better to do this dish. Thankfully i managed to get one nicely wrapped with the omelette. :)
