Papaya Pork Rib Soup 木瓜排骨汤

I didn't intend to boil this soup.

My BIL bought an immature papaya and although it looked ripe on the outside, inside it's still pale and crunchy. He didn't know what to do with it and so he handed it to me, so that it won't be wasted.

I used the firm papaya to boil this soup. Although it is suitable for post pregnancy confinement consumption, it is also neutral enough to be consumed by the family.

I forgot to soak some peanuts, if that is used, it will taste even better. Right now.. it is already very sweet.

800g papaya
300g pork ribs
10 red dates
15g dried octopus
7 white peppercorns
Salt to taste
1.5L-2L water.

1. Bring water to boil.
2. Meanwhile, peel papaya, remove the seeds and cut into chunks. Rinse the cuttlefish. Remove the seeds from red dates. Crack peppercorns with flatting them with side of knife.
3. When water has boiled, put in everything. Bring back to a boil and simmer for 2 hours. (Top up more water if it's necessary)
4. Season with salt and serve.
