Black and White Raspberry Slice

I found one place selling raspberries cheaper than most places by about 30% and so, how could I resist but get one punnet. I made this on impulse after googling for something to do on a Sunday afternoon.

When the kids heard I was in the kitchen doing something, they ran in. Each asking me if they can help. With this being an easy bake, I agreed to let them help, all 3 of them. Lydia did the sifting and cream cheese mixture and Lyanne mixed the wet ingredients and helped with the final mixing. Not forgetting my boy with the raspberries. It was fun and enjoyable.

Blueberry Double Cheesecake

Long long ago.... I saw this cheesecake on My Kitchen. That's where the inspiration came from.

My kids dubbed this as their all time fav cheesecake. I told them, it's very expensive to make, LOL.

I made this two years ago, sorry yeah.. was too busy with MFF and AFF that all that I'm sharing now are all old recipes. I'm digging them out each week.

Cranberry Upside Down Cake

I'm lazy...... bought my cranberries for around 2 years, kept frozen. Yes, you read it right, 2 years.
Finally, I baked this cake.

And being absent minded, I didn't notice most recipes calls for the cake to stay in pan for 30 minutes before overturning. Instead I treated it like pineapple upside down cake that needs to be inverted right away after removing from the oven.......

Cranberry Orange Jam

It's the season for cranberries!
I used to think cranberries were bitter and very sour.... that was after tasting a cranberry sauce meant for a roasted turkey. Surprisingly this jam was nice after all the sugar was added. No prominent bitterness.... just a faint note that can be ignored.

You can use this to spread on bread, as a filling for cookies or a topping for cheesecakes.
If not, just mix with water and take it as a drink.

Cranberries are good for you, especially the men :)

Strawberry Cake, literally - Kiddie Cakes #2

My dear niece Arianna turned 2 this year and her given theme for me this year is "STRAWBERRY"

Her mom said, she loves strawberries. So, I made her this. A strawberry cake literally.
I didn't want to use any food colouring and so I used fruits to 'colour' the cake and make it look like a strawberry.

Mulberry Apple Loaf - Berry #3

Midway...... They look different with every slice, I love it

The recipe from BBC Good Food looked so nice, and been bookmarking this recipe for more than 2 years. So much so that I have lost the link as I have formatted my PC quite a few times, but I still remember this recipe existed on BBC, so a quick google won't take much time to retrieve.

Blackberries are not cheap here, one box can cost me a few lunch's worth of $$. Mulberry is the only berry that we can grow in our constant over 30-38C day time temperature. And nowadays it's easily available in the gardens of many households. Constant pruning will yield more fruits.

Blueberry Baby Cakes with Cheesecake Topping - Berries #2

I was pretty much attracted to how the cake looked with 2 layers of colours, but I don't know why mine came out looking pretty homogenous, the lower layer didn't look brown like the source.

The original was baked direct in the muffin pan, but I was a bit chickened out, scared I'll mar the cake's surface when I lift it up, so I better line it.

Mixed Berries Almond Cake - Berry #1

This cake is quick to do and easy to eat.

I am in love with cakes made with almond meal. It is moist and delicious with a beautiful tender crumb.
The recipe is adapted from Tartelette’s poached pear cake and I have previously tried it before and it was like she said, slightly pudding-like. I reduced the cream this time, it was more cake like and everybody loved it.

Strawberry Custard Cream Buns - Fruity Buns #1

The blueberry buns that Pook made were soooo pretty. Can't take my eyes off them. And so, I wanted to make them too. I chose to use strawberries because of the price factor and personally I love strawberries.

My girls thought these were cupcakes due to the form it takes in. And they were in for a surprise when they tried eating it.

Blueberry Yogurt Mousse Cake - Mousse Cake #3

If you don’t like yogurt you will HATE this cake. That was the reaction given to me by my brother’s neighbour’s kid. “Yucks, this cake tasted horrible!”. Well, later my mom told me, this boy doesn’t even eat cheese on his pizza. Ok, so that explains it.

Another kid exclaimed to my niece when she saw the cake , “Eh, why your cake has nothing one”. I think they are pretty used to elaborately topped cakes from local bakeries. Some bakeries here will use plastic toppers like toys and such to visually enhance it. Adults instead found this deco to be elegant and beautiful.

Strawberry Meringue Baskets - Strawberry #3

I made this sometime ago because I happened to have a tub of greek yogurt. Ipoh's latest shopping center Aeon Station 18 has opened not too long ago and on my first visit, I saw a new range of products brought into Ipoh city :) Finally greek yogurt has arrived.

I've been visually attracted to this meringue basket sometime ago... and it was supposely to be filled with whipped cream and topped with strawberries. I decided to borrow that concept and use greek yogurt and fill it with strawberries too, rather than just on top. And add some texture and flavour contrast with a chocolate ganache as sauce.

Strawberry Almond Muffins - Strawberry #2

It was one of those hungry afternoons again.

I rumaged the fridge and saw this box of strawberries bought 2 weeks before and still looking pretty good untouched under the cling wrap. Then I took out some milk, ground almond and few eggs and this and that and some muffin liners recently given to me by fellow blogger HKChoo. I started baking muffins without a recipe.

Homemade Strawberry Jam - Strawberry # 1

Recipe created on Oct 2011

Strawberry jam... seen a lot on supermarket shelves?

Whenever I open a jar of commercial jam, usually I smell the sugar rather than the fruit. I know not all brands do, but most of them do, not gourmet jams that costs RM20 above, not those. And commercial jams taste soooo sugary that... you can only spread a thin layer of it onto the bread. With that thin layer, how much fruit do you get to taste? Some budget jams don't even have any fruits in it, but just colouring and flavouring.

Au Naturel Rainbow Pancake Cake - Pancakes #3

My pretty, kawaii niece Arianna was going to have her first birthday and I'm in charge of her cake! Haha, as always, the favourite aunt of all my nieces, LOL. I do try to use natural colours and pigments whenever I can and am always excited to experiment.

Once during a tea party at Swee San's, she made a beautiful natural rainbow cake and it made all of us WOW! It was from her creation that I was inspired to try making mine, au naturel.

Quinoa Rice Pudding with Blueberries - Baby food # 1

How was your school holidays?
I love it because I could sleep until the sun shines bright......
I hate it because the house will be in a mess all the time.
Now it's over, I'm glad but yet dread the early mornings.
Haha....

Many of us South East Asians are used to preparing baby's porridge with rice. Usually savoury with meat(fish, chicken or pork) and vegetables. The porridge is both filling and nutritious. This time around I want to be more adventurous and wander off into more unfamiliar territories.

Strawberry Cream Cheese Stuffed French Toast - Eggy Bread # 2

*I served it with Kopi-O (local black coffee). *

Woooooahhhh.. what a long name.
Make your kids say the name properly before they can dig in. Hahah!

The same old french toast is kinda boring at times.
And sometimes we are left with just a bit of cream cheese that we don't know what to do with it....
Don't you just hate it when cheesecakes calls for 450g or 200g of cream cheese? What to do with the 50gm balance?

Chocolate Raspberry Cake - Rasps Whole Cakes #3

This was the first birthday cake that I made for ME. My birthday was months ago, more than half year ago... as you all know, I post very slowly.

Personally I felt awkward making a cake for myself. But it's because my kids now understand that birthdays are something special for a person, then I can have my own cake and blow it too. I can't wait for the day when my kids will bake me my cake because no one will buy me one ... get it? LOL.

Coconut Raspberry Lemon Cake - Rasps Whole Cakes # 1

Actually… I made this cake based on Dorie Greenspan’s Perfect Party Cake. But, somehow cakes calling for the method that mixes butter with flour and lastly with eggs just never finds favour with me. They refuse to rise well. I was slicing the cake, preparing to frost it....... hesitating..... whether I should continue with or not with a not so fluffy cake. In the end, I decided, NOPE. So, I dumped the cake into the fridge and quickly made another cake, with a trusted method that I am comfortable with. Make a sponge using the chiffon method. There's only 2 hours left to serving time. It was my FIL's birthday.

Kumquat Blueberry Orange Cake and an Elephant for Lyanne - Kumquat #1

Lyanne turned 3 last Dec 31st. Phew! She's 3. Time flies. She's not as chatty as Lydia, special in her own way. Handy in the kitchen, loves podding beans, peeling chestnuts and make cookies! And once she comes in to help, she stays until the end. Sweet girl. She just started Kindergarden, in a 4 year old class, but she's just 3 years and 5 days old. I worried..but I think she's doing fine. She loves school.

She loves elephants. So, I made her an elephant cake. I was hoping it'll be something like Elly of Pocoyo. It wasn't very much like Elly, but haha, a cousin of mine said it's Elly the moment she saw it. So, I think.... I think... I think I am successful .. I think.

Montebello Torte - Red Green Week # 2

Montebello is a pistachio and red berries combination created by the great Pierre Herme. I've seen some that goes with strawberries, some goes with raspberries. The combination is different for different things, for example, macarons are with raspberries and, confitures and entremets are with strawberries. Read more here.

Initially I wanted to do a tube shaped sponge then top with strawberries and kiwi fruit to form a wreath. But then come to think of it, it sounded too "cincai"(simply done). It's not about making up the quantity, because I intended a candy cane, a wreath and a Xmas tree. It's not about winning the giveaway, it's about winning over myself. I have to make something I feel excited about.
