Blueberry Double Cheesecake



Long long ago.... I saw this cheesecake on My Kitchen. That's where the inspiration came from.

My kids dubbed this as their all time fav cheesecake. I told them, it's very expensive to make, LOL.

I made this two years ago, sorry yeah.. was too busy with MFF and AFF that all that I'm sharing now are all old recipes. I'm digging them out each week.

Fish Pie - Fish Week #2


Fish pie is a traditional British dish. Read more about it here. If I were to make this again with more seafood, I'll name it as Fisherman's pie.

During that time, my brother in law dines with us on week days.I thought this pie was huge and when my BIL said he won’t be coming for dinner, I was worried it won’t be finished, but I was wrong. My hubby and I ate it all with pleasure. LOL.

So good!

Pumpkin Scones with Cinnamon Cream Cheese Glaze - Scones #3


I rarely bake without my weighing scale..but on this day.. it died on me just when I wanted to weigh my flour.

Scones are very forgiving, and you need not to be on the dot, unlike delicate cakes and pastries. It'll still come out alright. A +/- of 20gm flour doesn't matter much, as we don't even measure how much we dust the table during shaping and cutting. As long as the dough is soft and sticky, don't overwork it, you should be on the safe side.

Goiabinhas @ Brazilian Guava Cookies - Cookies #4

Someone close to me went to Brazil on a business trip and asked me if I needed anything. The first thing that sprang to my mind was Goiabada, the pink guava paste that I once read about on Lena's Romeo and Juliet cake.

When  this person went there.... the hotel he was staying was just right beside a supermarket, and so he tried to find it  for me. He told me, "You are soooo lucky. These are the last 2 packs on the shelf".

Turkish Borek - AFF West Asian Pastries #2


Börek in Turkish language is any pastry made with yufka or commonly known as phyllo/filo. Borek comes in many forms and can be filled with a variety of fillings, but the traditional ones are usually spinach, cheese and minced meat.They can be either fried or baked. You can read about the different types of Borek here

The one I made today is kol böreği and it means 'arm borek' or arm pastry. It is rolled long and can be coiled or shaped into zigzags on the pan. I will go for coil as I like anything that resembles flowers.

Mango Cheese Charlotte -No Bake Cheesecake #3



MIL suddenly asked us out for dinner with a newly wed couple who are relatives. And asked me whether I can make a cake for them. 22 hours notice!

To make a cake for the newly wed couple as a simple dinner celebration, is not like a birthday cake or a regular cake, I have to incorporate romantic elements into it. I can only make do with whatever I have in hand. I have mangoes, limes, chocolate, coffee and no berries at all in the fridge. So, it's either I make a mango cake or a mocha flavoured cake.

It's quite an expensive cake to make,but worth it, if you are not into food colouring but yet want to make a surprise for kids.

Pistachio Lime Cheesecake - No Bake Cheesecakes #1



This cake was a feat!

I got to know that my BIL’s birthday was on the day itself at 1.30pm. I asked him whether he wants a cake, and he said yeah, cheesecake but egg free please. Then I searched for some cheesecake series and passed the phone to him, asking him to select the one he wants. He chose a lime and strawberry cheesecake.

I had no strawberries on hand but I happened to have some homegrown limes from my brother’s neighbor. That’s perfect! I don’t have limes at home usually and he’s one lucky man! And I also bought a good sum dairy products in baking the day before, so, making a cheesecake will not be too hard. A baked one will take too long as I had to get the cake ready that day itself and ah-ha, since he wanted it egg free, let’s just make a no bake cheesecake, a lime flavoured one.

Coffee Marble Cheesecake - Baked Cheesecakes #2


I created this cheesecake for a wedding reception of 150 guests.

My husband's cousin got married last November. The groom's mother, our aunt, requested that I bake some desserts for the reception because the only dessert the caterer offered was fresh fruits.

I made quite a number of things and 2 cheesecakes. One of the cheesecakes is this. The other is a light tasting slightly fluffy orange cheesecake. I planned it in such a way that the guests will have some taste and textural contrast, and everything is bite sized. The rest of the dessert was Designer Chocolate Baby Grands, Kumquat Almond Tea Cakes, Vanilla Cream Puffs and Rainbow Jelly. I wanted to make more, but time  and manpower was a constraint. I was the only person doing almost everything until the final 12 hours. Baking is easy, cleaning up is not.

White Wine Cheesecake - Baked Cheesecakes #1



I heard about this cheesecake from Reese and she told me how delicious it was. When I finally had a bottle of opened white wine I decided to try it out for myself.

It was still a boozy even after baking for 1 hour, so the kids were forbidden to eat.

I liked it but my hubby was only ok because he wanted it to be more cheesy. My MIL found it too boozy. So, it's pretty much up to the individual. But I'd say the texture is absolutely beautiful. Smooth and creamy but light at the same time.

Feta Cheese Bread - Cheezy Bread #3



This is a savoury bread. Not the type of airy cottony Asian breads, and neither is this flavourful like Artisan breads.

The only sugar here is used for activating the yeast. Although I used instant yeast, it's good to go through the activating process once a while to check whether it's still viable. I keep my jar of yeast in the fridge, but still it's better to be safe than sorry.

Almond Cheese Buns- Cheezy Bread #2



Where’s the cheese? Can’t see it oozing right?

It’s in the dough. Kneaded in the dough. But frankly, I can’t smell or taste the cheese.
The buns are quite good, but not sweet enough for me. Well, it is not bland. But when the buns are filled with almonds, I would expect it to be sticky and sweet, rather than just ‘not bland’. It has to have that stick that I always expect with almond fillings. The next time around, I’ll double the filling’s sugar.

Chocolate Cream Cheese Buns - Cheezy Breads #1

I think I should not be keeping these in my drafts any longer.



I saw this recipe in Veronica's blog and it loooooks soooo tempting.
But my cream cheese filling isn't as smooth as Veronica's. Maybe it's my itchy butt decided to chop up the cheddar slices and mix it in, LOL.

The recipe is egg free (if you skip the glaze) and with only that tablespoon of milk yields a pretty soft bun. I am impressed. Absolutely!



Chocolate Cream Cheese Bun

Dough
300gm bread flour
30gm cocoa powder
5gm instant yeast
65gm sugar
5gm salt
1 Tbsp full cream milk powder
190gm water
40gm butter

Filling
250gm cream cheese, room temperature
50gm icing sugar
2 slices of cheddar cheese, chopped

Topping
1 egg, beaten
Almond nibs

1.Combine dough ingredients and knead until window pane stage. (KA speed 4, 15 minutes)
2. Cover and let it proof til double.
3. Meanwhile, mix cream cheese with icing sugar and cheddar cheese, form into 10 blobs and keep chilled until time of use.
4. Divide dough into 10 pcs and wrap with filling.
5. Place wrapped dough onto a lined tray, and let it proof for 45 minutes, until puffy and big.
6. Preheat oven at 160(fan)/180C.
7. Brush the top of dough with beaten egg and sprinkle almond nibs over.
8. Bake for 15 minutes or until done.

Baked 3 Layer Beef Pie - Beef Week # 1

When I ate my first mouth of this……. OMG, this is good. That’s all that came into my mind.

My hubby went ummmm, Lydia gave me a big thumbs up and a very wide smile, Lyanne said nice, nice nice, my MIL quickly asked me the recipe, Mike’s aunt said tasted very delicious, my BIL quickly savoured his first piece and took seconds and thirds, too busy to say anything but to eat. Hahaha!!

At the end of the meal, we all felt satisfied, very satisfied. The kind of feeling that you’ll get after a good meal.

Strawberry Cream Cheese Stuffed French Toast - Eggy Bread # 2

Woooooahhhh.. what a long name.
Make your kids say the name properly before they can dig in. Hahah!

The same old french toast is kinda boring at times.
And sometimes we are left with just a bit of cream cheese that we don't know what to do with it....
Don't you just hate it when cheesecakes calls for 450g or 200g of cream cheese? What to do with the 50gm balance?

Classic Macaroni and Cheese - Pasta week # 2

My first encounter with Mac and Cheese was at Kenny Rogers Roasters in 1994 at KotaRaya's branch. It was my favourite side dish. Sometimes I will just order Mac and Cheese and nothing else. Each time I go to KL by bus, I will surely dine there at least once just for this. It was only walking distance from Puduraya Bus Station.

Kumquat Blueberry Orange Cake and an Elephant for Lyanne - Kumquat #1


Lyanne turned 3 last Dec 31st. Phew! She's 3. Time flies. She's not as chatty as Lydia, special in her own way. Handy in the kitchen, loves podding beans, peeling chestnuts and make cookies! And once she comes in to help, she stays until the end. Sweet girl. She just started Kindergarden, in a 4 year old class, but she's just 3 years and 5 days old. I worried..but I think she's doing fine. She loves school.

She loves elephants. So, I made her an elephant cake. I was hoping it'll be something like Elly of Pocoyo. It wasn't very much like Elly, but haha, a cousin of mine said it's Elly the moment she saw it. So, I think.... I think... I think I am successful .. I think.
